Healthy Superfood Salad Recipe
I normally do not pride myself on being great at making salads, but this superfood salad recipe was delicious! Pandemic fatigue hit me like a freight train in March, and I've started focusing on the foods that go into my body. I'm always cautious not to make definitive statements about foods because that's when I fall off the rails. So, I'm limiting my dairy intake and avoiding eggs to help with inflammation. Madhava Superfood Salad Ingredients
For this recipe, I grabbed Madhava Olive Oil, which is available at local retailers and Amazon. It's single-sourced from the clean soil and pristine growing conditions of Tunisia and packed in Sicily by a 5th generation Sicilian olive oil master who tastes and tests each lot of our extra virgin olive oil to ensure quality and authenticity. As someone who's Sicilian, I love that!! I also included Madhava Agave for a touch of sweetness, which I ordered from Amazon, too. Madhava’s agave is grown and harvested in partnership with non-GMO and organic blue agave farmers in Jalisco, Mexico who share our values of doing good for people and the earth. Then, I included the Madhava Balsamic Vinegar, which is packaged in Italy and contains organic white wine vinegar, and organic concentrated grape must. It's truly amazing how pure the products are. Madhava Superfood Salad Recipe
For this recipe, please use:
A bed of greens - I used kale
1/2 sweet potato
1 1/2 cups cauliflower
1/2 avocado
1/4 cup chickpeas
1/2 cup broccoli
2 tbsp shaved almonds
2 tbsp Madhava olive oil
1 tbsp Madhava balsamic vinegar
1 tbsp Madhava agave
1/4 cup feta cheese (optional)
1 cup chicken (optional)
Preheat the oven to 400 degrees. Rough chop the sweet potato, cauliflower, and broccoli. Sprinkle olive oil, salt, and pepper on the vegetables and roast for 30 minutes.
Put a bed of lettuce on a plate or bowl. Sprinkle the vegetables across the bed of lettuce.
Sprinkle the chickpeas and shaved almonds.
Slice the avocado and top the salad with it.
If adding feta or chicken, add it to the top.
Combine the olive oil, balsamic vinegar, and agave in a bowl and whisk together OR drizzle each individually.

The salad is for one person, but you can easily double the recipe for two. Also, you can roast all of your veggies and save them for the week. By changing up the base, it would feel like a new meal every day. For example, you can use quinoa, farro or a different bed of greens. I'm most excited that I found Madhava because of the ingredients and perfect for so many recipes. I can upgrade all of my go-to recipes.
