Cocktail Recipe: How to Make a Raspberry Mojito

On a hot summer day, nothing beats the refreshing taste of a classic Cuban cocktail with a fruity twist – the Raspberry Mojito. Bursting with sweet raspberries, fresh mint flavors, and zesty lime, this cocktail is sure to become your go-to drink for happy hour or any summer celebration. Plus, it's easy to make with simple ingredients you probably already have on hand.

Get ready for this Raspberry Mojito to be your go-to this season. This is one of my favorite summertime drinks. Not only is it delicious, but it’s light! I love a classic mojito recipe and always gravitate towards them on vacation. With two little kids, vacations are not as frequent as they used to be, so cocktails on the patio will be my vacation. If you're a parent, then you know any time away from the kids feels like vacation!

Light cocktail ideas

I love creating fun cocktails and saving ideas to my Pinterest board here. Once the weather turns, I start to crave light drinks and they're always easy to make with torani syrup.

Raspberry Mojito Recipe

When I tell you this recipe is delicious - I mean dangerously delicious! It’s so easy to make, too. Typically, I don't gravitate towards fruity cocktail -- especially raspberry cocktails, but this one is truly light and delicious.

I don’t know about you but after a long winter, I’m ready for cocktails on the patio.  I love to make fresh cocktails and this zero-sugar raspberry flavor does not disappoint.

Using fresh ingredients really makes this cocktail delicious. While you can use frozen raspberries, I opted for fresh raspberries and mint. However, I did cheat and use lime juice instead of fresh lime or lime wedges.

Raspberry Mojito Ingredients:

1.5oz white rum

  • 1 cup of club soda - I opted for a lemon-lime club soda

  • 6 fresh raspberries (frozen works, too) 

  • 10 fresh mint leaves

  • 2 tablespoons of fresh lime juice

  • 2oz Torani Sugar-free Raspberry syrup

  • Ice cubes

Raspberry Mojito instructions:

    1. In a cocktail shaker, muddle together fresh raspberries, mint leaves, and raspberry syrup.

    2. Add light rum, fresh lime juice, and ice cubes to the shaker.

    3. Shake well to combine all the flavors.

    4. Strain the mixture into a tall glass filled with ice.

    5. Top with soda water for a refreshing fizz.

    6. Garnish with a mint sprig, fresh berries and a slice of lime.

    7. Enjoy your delicious Raspberry Mojito on a hot afternoon!

Raspberry Mojito Recipe Substitutions

If you want to be fancy, you can certainly muddle the mint; however, it's not a requirement. If and when you muddle, I would use a wooden spoon.

Also, you can swap in simple syrup or an agave nectar for the lime juice if you prefer your cocktails to be on the sweeter side.

If you opt for simple syrup or agave nectar, try to pair it with soda water to temper the sweetness. The raspberry, lime, mint flavor is delicious no matter how you create it!

This recipe would also work with with Peach, Mango, or Coconut Torani Puremade Zero Sugar Syrups.

 

Raspberry Mojito Food Pairings

Pair it with fresh appetizers

There's nothing better than simple, fresh appetizers in the summertime. I love to entertain and when we refreshed our deck last year, we entertained all the time.

Some of my favorite appetizers that would pair well with this are a charcuterie board, ricotta toast, peach & prosciutto wraps and Texas caviar.

Charcuterie Board

Charcuterie boards are so fun and can be super easy! I like to pick two different meats and three different cheeses in addition to a dried fruit, a nut, two types of crackers and a spread. There are a million ideas on Pinterest, and I also have a post here to help you!

Ricotta Toast

Ricotta toast is a favorite appetizer of mine. It's so easy to toast bread, top it with a whipped ricotta cheese and pick your favorite toppings. Some of my favorite combinations are:

  • Tomatos, basil and balsamic

  • Blueberry and hot honey

  • Peaches and basil

  • Fresh arugula tossed in a dressing with poached eggs

  • Pistachio, lemon, thyme and honey

Peach & Prosciutto Wraps

Grilled peach is a delicious treat in the warmer months. I particularly love it wrapped with prosciutto and mozzarella cheese with a balsamic glaze drizzled on top. You can wrap them or turn them into skewers like Gerry's recipe here
